Varieties and characteristics
Floral sources and types : Honey can vary according to its floral source, which influences its composition and properties. For example, darker honeys are richer in antioxidant phenolic compounds.
Special Types: Two varieties of honey stand out: acacia honey, water-soluble and stable in cosmetic formulas thanks to its high fructose content; and manuka honey, native to New Zealand, known for its strong antibacterial power due to a unique component, methylglyoxal.
